Peanut Butter Halloween Bug Cookies

Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Candy eyes
  • Melted chocolate or chocolate chips
  • Mini peanut butter cups or chocolate-covered candies
  • Pretzel sticks licorice strings, or chocolate drizzle

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine peanut butter, sugar, egg, and vanilla extract until smooth.
  • Roll dough into 1-tablespoon balls and place 2 inches apart on the baking sheet. Flatten slightly with a spoon.
  • Bake for 8–10 minutes until edges are set but centers remain soft. Cool slightly on the baking sheet, then transfer to a wire rack.
  • Press a mini peanut butter cup or chocolate candy into the center of each cookie for the bug body.
  • Melt chocolate and use it to attach candy eyes. Add pretzel sticks or licorice for legs, or drizzle chocolate for fine details.
  • Let the decorated cookies set until chocolate hardens. Serve or store as desired.
