A beautifully styled presentation of the kidney-friendly ground beef meatloaf recipe. The meatloaf, sliced neatly, is arranged on a wooden cutting board, revealing its moist and flavorful interior. A glossy low-sodium ketchup glaze tops the loaf, adding a rich, appetizing shine. Surrounding the meatloaf are small bowls of fresh parsley, a drizzle of extra ketchup glaze, and a side of lightly roasted vegetables or a fresh salad for garnish. The warm, natural lighting enhances the textures and colors of the dish, while a clean, rustic kitchen counter with a loaf pan, a spatula, and a mixing bowl in the background hints at the preparation process. Ingredients

  • Lean 90/10 ground beef to reduce sodium and fat
  • Plain panko breadcrumbs containing only 40 mg of salt per 1/2 cup (as opposed to regular breadcrumbs with 200-600 mg of salt)
  • No-salt-added ketchup with just 5 mg of sodium per serving (compared to regular ketchup's 180 mg)
  • A variety of herbs and spices for flavor without added sodium
  • An egg to act as a binder helping to hold the meatloaf together

Instructions

  • Preheat your oven to 375°F.
  • In a large bowl, mix all the meatloaf ingredients with a fork. Mix gently to avoid overworking the meat.
  • Lightly grease a loaf pan and put the meatloaf mixture in it, shaping it evenly.
  • Bake the meatloaf for 40 minutes.
  • After 40 minutes, add your chosen low-sodium glaze or sauce on top of the meatloaf.
  • Bake for another 15-20 minutes, or until the internal temperature reaches 165°F. Once done, take the meatloaf out of the oven and let it rest for 10 minutes before slicing and serving.

Notes

  • Meat Choice: For a leaner option, use 90/10 ground beef. You can also substitute with ground turkey for a lower fat version.
  • Breadcrumbs: Plain panko breadcrumbs are used to keep the sodium low. Avoid using regular breadcrumbs, which can contain significantly more salt.
