- 1 whole chicken (cut into pieces)
- 2 cups couscous
- 1 onion (chopped)
- 3 carrots (sliced)
- 2 zucchinis (sliced)
- 1 cup chickpeas (cooked)
- 1/2 cup dried apricots
- 2 tbsp apricot preserves
- 1 tsp turmeric
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- Salt and pepper to taste
- 3 cups chicken broth
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot and sauté onions until soft.
- Add chicken pieces, spices, salt, and pepper. Cook until lightly browned.
- Stir in chicken broth, apricot preserves, and vegetables. Simmer for 45 minutes.
- Steam couscous according to package instructions.
- Add chickpeas and dried apricots to the pot. Simmer for 10 minutes.
- Serve chicken and vegetables over couscous, drizzling with the sauce.
Notes
- Adjust sweetness by increasing or decreasing apricot preserves.
- Serve with fresh cilantro for garnish if desired.
